Coconut

For years I have walked through the produce center and walked right by the coconuts.  I have always wanted to buy a coconut, but I had no idea how to open them or what to do with it once I got it open!  So awhile back, I set out to conquer  my fear of a coconut  To my surprise, it wasn’t that bad after all and was actually quite easy.  Yes it will take about 5 minutes to open and…

Orange Cranberry Scones

There is nothing I like more then to sit down with a hot cup of tea and a freshly baked scone!  These scones bring me back to my days as a restaurant owner where we made our own orange cranberry scones from scratch.  There is something about these two flavors (orange and cranberry) that taste so amazing!  They are slightly sweet and slightly tart all at the same time.  The cranberries add such a nice texture to the scones. …

organic apple

There is one thing in my family that we all love and that is a crispy, sweet organic apple.  I am always looking for ways to pack nutritious food into my girls lunch boxes and until recently had no problems with packing a whole apple in their boxes!  My twin daughters are 6 and my oldest is 7 and all three of them have a hard time eating whole apples now because they all have wiggly teeth!  So I…

organic

I am very passionate about eating organic food.  Just what is organic food?  Organic food is grown or raised without the use of synthetic pesticides, herbicides, fungicide, or fertilizers.  There are so many reasons why to convert to organic food, I will save that for another post.  In this post, I want to focus on ways to save when buying organic food.  It can be hard to convert fully to an all organic diet, do it in small steps.  You are…

Fork Tender Organic Swiss Steak Recipe

It has taken me 2 quarter sides of beef to figure out how to cook my grass fed beef, but I have finally  figured it out!  As most of you know, I buy my meat locally from a farmer and it is 100% grass fed.  Why grass fed?  Grass fed  - Cows, Sheep, buffalo were designed to eat grass.  However, todays ranchers have been feeding them grains to make them fat and sell more meat.  These animals were not…

Parmesan Quinoa Bites

A Healthy Appetizer   So I am always looking for a delicious yet healthy appetizer to serve when I am hosting a get together.  The other night I made these and everyone loved them! Of course all of my guest asked me, “what are in these?”  and with a smile and knowing a mountain of questions were about to blossom, I said “Quinoa”.  The replies, “Quinoa ?  What is that??” So I danced at the opportunity to educate my guest…
