Oh my goodness, did I stumble upon the BEST recipe ever yesterday!  This recipe is so different and so good I just had to share it with you all!  This recipe comes form my good friend Katie over at This Chick Cooks.  It is simple, full a flavor and such a healthy snack.  My girls LOVED these and asked me to make another batch.  So what is this awesome dish?  Roasted Chickpeas.  I know, have you ever heard of roasting chickpeas?  I hadn’t until yesterday!  When you roast them, they take on a totally different flavor and texture.  These little things are crunchy, a bit salty and packed with all kinds of flavor!  I can see putting these on salads, packing them in my kids lunch, putting them in a healthy trail mix…the possibilities are endless!

 

Here is what you need to do.  The only change I made was instead of using olive oil, I used grass fed butter.  Simply toss your chick peas with butter and spices (see recipe).  Put on a baking sheet and roast for 30-35 minutes.
