Roasted Kolrabi and Sweet Potatoes

Ingredients
  • 1 cup cubed sweet potatoes (skin removed)
  • 1 cup cubed kohlrabi (skin removed)
  • 2 tbsp melted grass fed butter
  • 5 sprigs of fresh thyme
  • salt and pepper to taste
Instructions
  1. Mix all ingredients together and roast in a 450 F oven for 25 minutes, turning half way through the cooking time.
