Description
A delicious Parmesan quinoa bites recipe.
Ingredients
- 1 1/2 cup cooked quinoa (1/2 cup uncooked will make 1 1/2 cups cooked)
- 2 large eggs
- 1 green onion stalk, diced
- 1 clove garlic, minced
- 1/2 cup shredded raw parmesan cheese
- 3 tbsp fresh cilantro, chopped
- 2 tbsp almond flour
- 1/4 tsp unrefined seasoning salt
- 1/8 tsp ground pepper
- 1/2 tsp fresh lemon juice
- 1 tsp organic olive oil
Instructions
- Preheat oven to 350 F.
- Mix together all ingredients in a medium bowl.
- Grease a mini muffin pan with coconut oil.
- Scoop a heaping tablespoon into each mini muffin spot.
- Bake for 20 minutes.
- Serve hot.
