Description

A delicious Parmesan quinoa bites recipe.

 


Ingredients

  • 1 1/2 cup cooked quinoa (1/2 cup uncooked will make 1 1/2 cups cooked)
  • 2 large eggs
  • 1 green onion stalk, diced
  • 1 clove garlic, minced
  • 1/2 cup shredded raw parmesan cheese
  • 3 tbsp fresh cilantro, chopped
  • 2 tbsp almond flour
  • 1/4 tsp unrefined seasoning salt
  • 1/8 tsp ground pepper
  • 1/2 tsp fresh lemon juice
  • 1 tsp organic olive oil

Instructions

  1. Preheat oven to 350 F.
  2. Mix together all ingredients in a medium bowl.
  3. Grease a mini muffin pan with coconut oil.
  4. Scoop a heaping tablespoon into each mini muffin spot.
  5. Bake for 20 minutes.
  6. Serve hot.
