The best coconut lime cilantro rice recipe you will ever try. A must for any kitchen!
Ingredients
- 1 cup white rice
- 2 cups water
- 1 small sweet onion, chopped
- 2 TBSP butter
- 1/2 tsp lime sea salt – get recipe here
- 1/4 cup finely shredded coconut
- 1/4–1/2 cup chopped cilantro
- juice of 1 lime (zest can be used too if you really want a dominate lime flavor).
Instructions
- Over medium heat melt the butter in saucepan and saute the onions until translucent and slightly brown (about 5 minutes).
- Add in rice and cook for two minutes.
- Stir in the water and the lime sea salt, reduce the heat to a simmer and cover and cook for 20 minutes.
- After 20 minutes, remove from heat and stir in shredded coconut and put the lid back on and allow to sit for 10 minutes.
- Remove lid, fluff the rice with a fork and stir in the juice of 1 lime. Stir in the cilantro and serve.
