Description

The best “topless” banana nut muffins recipe ever!


Ingredients

  • 1 3/4 cup almond flour
  • 1/4 tsp sea salt
  • 1 tsp baking powder (gluten free)
  • 1 tsp baking soda (gluten free)
  • 2 tsp ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 3 very ripe bananas, mashed
  • 3 eggs
  • 2 tbsp coconut oil, melted
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 375 F.
  2. Mix together the almond flour, sea salt, baking soda, baking powder and cinnamon. Set aside.
  3. In another bowl combine mashed bananas, applesauce, eggs and the melted coconut oil. Mix well.
  4. Combine the dry and wet ingredients and mix until well blended.
  5. Stir in pecans.
  6. Grease a muffin tin pan with coconut oil.
  7. Fill muffins 3/4 full (almost to the top).
  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
