Description
This Gluten Free Grain Free Savory Quiche is one of my favorite gluten free & grain free savory quiche recipes!
Ingredients
- 1 Gluten Free & Grain Free Pie Shell – Get Recipe Here
- 6 large eggs
- 1 cup whole milk or fresh coconut milk
- 1 large sweet onion finely sliced
- 2 tbsp butter
- 1 cup sliced mushrooms
- 1/2 cup cherry tomatoes, sliced in half
- 1/2 cup shredded cheese of choice
- 3–4 slices of cooked bacon, chopped into small pieces
- 1/4 tsp freshly grated nutmeg
- salt and pepper to taste
Instructions
- Preheat oven to 400ºF.
- Make the crust and don’t worry about rolling it out, just press it into an ungreased 9″ pie dish and set aside.
- Preheat a large skillet to medium low heat and melt 2 tablespoon butter in the pan.
- Add the sliced onions to the pan and cook for 15-20 minutes. You do not want them to brown, but you want them to cook slowly until very soft (this makes them really sweet).
- After 15 minutes of cooking the onions, add the sliced mushrooms and cover the pan to allow the mushrooms to cook down. Season with salt and pepper.
- In a medium bowl add the eggs, milk and freshly grated nutmeg and mix well. Season with salt and pepper. Stir in cheese and bacon.
- Pour egg mixture into pie shell and add in the cooked onions and mushrooms. Top with cherry tomatoes if desired.
- Bake for 40-50 minutes or until a toothpick comes out clean.
