Welcome to another edition of Tasty Tuesday Crockpot Recipes, 3rd edition! If you haven’t had a chance to check out our new crockpot series then you must! What’s not to love about delicious quick meals that everyone will love? I mean really, you put some ingredients into a pot, turn it on to cook, and voila you have an amazing meal for dinner!
Well, today I am going to share an amazing recipe from Lindsey over at Pinch of Yum! I made this recipe right before Christmas and alls I can say is * AMAZING!* Yep, it was that good. I didn’t know something so simple could taste so good!
I did make few changes to this recipe. I soaked my beans overnight as directed in my post: Are Soaking Grains & Legumes Necessary How To Properly Soak Them. I also used Ezekiel Sprouted Corn Tortillas instead of flour tortillas. Last, I used a gluten free beer for the beer, but I am sure you could use broth as well! It was absolutely delicious!
