Description

This organic strawberry jam recipe is great on everything from toast to crackers.

Ingredients

  • 1 pound organic strawberries, hulled and halved
  • 1/4 cup water
  • 1 tbsp arrowroot powder
  • 1 tbsp water
  • 1/4–1/2 cup coconut palm sugar or sweetener of choice

Instructions

  1. Put strawberries and 1/4 cup water in a saucepan and mash with a potato masher.
  2. Bring mixture to a boil and then simmer on low heat for 15 minutes stirring occasionally.
  3. Mash with potato masher one more time during the cooking process.
  4. Mix arrowroot powder with 1 tbsp of water.
  5. Pour into strawberry mixture and allow to thicken (about 30 seconds).
  6. As soon as it thickens, remove from heat immediately. If you overcook, it will become thin again, so be sure to pull it off the heat source as soon as it thickens. Keep in mind, it will thicken as it cools.
  7. Once you pull off heat, then stir in your sweetener of choice.

Halle… I used this recipe today to make a peach/mango jam … substituted honey for the stevia as we are not big fans of its after taste and added a pinch of salt (sea of course) and some cinnamon. It is really good !!!

Here is a great list of all the upick farms in our area! Barthels in Germantown has organic strawberries (not certified, but they informed me that they practice organic farming principals. http://www.pickyourown.org/wiaf.htm

Made a couple of batches of this last week with some of the 8 quarts of organic berries I got at my CSA farm. It was better this year than last… I used 1/4 C of organic cane sugar as the sweetner.

I love the taste of fresh strawberries but hate jam. I’m ok with doing a compote for waffles but the jam tastes so ‘not strawberry’ what about those freezer jam recipes where they use raw berries and pectin?

It’s worth a try Monique! I will try to give it a try this year.

How do you store this jam? Do you have to do the whole sterilize the jars and make sure the lid sucks in? or can you do it like freezer jam? Or do you have to eat it up right away? Thanks

@SusanBearance You can eat it right away or you can store it in the freezer either way works.  I don’t sterilize or can this, the heat would probably breakdown the arrowroot powder and it would become very runny so I don’t recommend that method.

perfect! just what I was hoping for – am picking raspberries today!
