A Healthier Chocolate Chip Cookie, Holistic Recipe

Ingredients

  • 2-3 tbsp coconut flour
  • 1/4 tsp unrefined sea salt
  • 2 tbsp steviva blend or raw honey
  • 2 large eggs
  • 1/4 tsp baking soda
  • 1/3 cup melted coconut oil (cooled)
  • 2 tbsp unsweetened finely shredded coconut flakes
  • 1/4 cup “Enjoy Life” mini chocolate chips (click on for details on where to buy them), or your own high quality semi sweet chocolate chips

Directions

  1. Preheat oven to 350 degrees F.
  2. Line a cookie sheet with parchment paper.
  3. Combine 2 tbsp of coconut flour, salt, steviva blend, baking soda, shredded coconut in a large bowl and stir well.
  4. In a smaller bowl melt coconut oil and allow to cool.
  5. Add eggs to cooled coconut oil and mix well with a whisk.
  6. Combine your dry and wet ingredients and mix together until there are no more lumps.
  7. Let the dough sit out for a few minutes, the dough will thicken as it sits out.  If the dough is not the consistency of a traditional chocolate chip cookie dough (fairly stiff), then add a little more coconut flour until you get the desired consistency.
  8. Mix in chocolate chips.
  9. Scoop rounded spoonfuls onto the baking sheets.
  10. Bake for 12-14 minutes.

    we made these and added a tbsp of cocoa and a bit more sugar.. the coconut oil makes them melt in your mouth one of the best cookies ever!! great job halle

    ok baking incompetence part two .. the dough turned out just like you said but i used a brownie size pan to bake them in instead of a cookie sheet and they ran together and made one big cookie 🙂

    yeah i crack me up NOT . my bad because i only had tiny eggs so i used 3 instead of 2 so they turned out like cake .. i will try again this is not going to beat me!!!

    ok so . the cookie that turned into a whole pan i cut up in bars . very similar to blonde brownies so there i now have 2 variations on the cookie.. also i was thinking a quarter cup of chopped macadamias in the cocoa version baked round three today then still ran out flat not like yours i even put an extra tbsp of coconut flour .. any ideas?

    somewhere your measurements are off. If they are running flat, then they don’t have enough coconut flour. Are your eggs Huge? Try adding a little more coconut flour.

    i did use 3 tbsp coconut flour yes i just realized when i was talking to my egg lady that my eggs are huge way larger than what is graded as “large” in the store..lol the ones i made at my friends house turned out like yours but we used 4 tbsp of flour now everyone said my “bars” were great lol
