How To Make Kombucha Soda
Making kombucha soda is so easy! Follow these 4 easy steps and you will have kombucha soda!

- Place 8-10 Fresh or Frozen Berries Into Bottles
- You Can Use Just About Any Berry
- Pour Finished Kombucha Over Berries
- Cap Bottles and Store In Warm Place for 2-3 Days
Remember, NEVER shake your kombucha, it can explode under pressure!
After the 2-3 days in dry storage, refrigerate your kombucha soda to stop the fermentation process.

Hey, Jenn! I’m new to Kombucha brewing, but read on culturesforhealth.com that if you don’t get a SCOBY from a friend, there are “other options including purchasing a scoby or growing one from a bottle of commercial raw kombucha” (unflavored). We live in Tallahassee and I kept my eye on the Tally Freecycle emailing. Found one, but impossible, then found another that worked out:) Blessings ♥

Can I use the scoby from my apple cider vinegar for starting my kombucha.
I made my first batch,it doesn’t taste right, more like sweet tea not fermented after 11 days. Did I do something wrong. Also my Scobey is thin and separated a few times. Thank you for your reply.
Nope, doesn’t sound like you did anything wrong. My guess is that you live in a colder climate. The first time I made Kombucha was in the winter in Wisconsin and it took 21 days for my kombucha to be done. On your next brew, you might want to consider moving it to a warmer place in your home.

“That’s entirely up to you! So many factors affect how long it can take to get to the flavor you desire. In Texas in the summer, my kombucha fermentation takes 7 days from start to finish, including the second ferment with fruit. In the winter, when room temperature is about ten degrees cooler, my kombucha takes about 12 to 14 days to reach the same level of tartness. There are people who live in more Northern climates who let their kombucha brew for 21+ days! If you’re concerned about safety, just use a pH strip to make sure you’re drinking the brew between pH levels 2.5 and 3.0.”

I noticed some people asking about Coca Cola flavoring… A friend just tried it using the Coca Cola Syrup you can buy at your local Pharmacy, it’s behind the counter, you have to ask for it. She added a 1/2 tsp of sugar to the 2nd fermentation to get fizzy, then Stevia drops to sweeten to taste, after she reached desired fizz. It’s about as close as you’ll get with Kombucha, but closer than trying to figure out the recipe…
Sorry, hit send without finishing… After a short time she started leaving out the tsp of sugar and only sweetened with stevia to taste. The 2nd fermentation took a few days, tops… She no longer drinks straight Coca Cola, just the Kombucha now, as she prefers t to Coke.

After the fruit has been sitting 2-3 days do you strain it out before you refrigerate the kombucha?
You can, but I just leave the fruit in the kombucha.

I have one concern I was hoping someone with experience can help me with.
About the EZ Cap Clear Bottles I have seen online widely used for the second fermentation step,
how do you clean them after? It seems to me that with such a small opening at the top if I add the pieces of fruit, berries, ginger, etc.. I am not going to be able to get them out and I’m not sure how well I will be able to clean the bottle after. How do you do it?
I appreciate any and all insights into this.
