When I tell people I am gluten free, I often get those looks…you know the pity look…oh how terrible, you can’t enjoy good food!
This couldn’t be the furthest from the truth. Eating gluten free is tasty and full of flavor and can also be good for you too!

The first week was a huge success. My whole family enjoyed the many gluten free dishes that I prepared for them this week!
My girls especially enjoyed my homemade gluten free pasta recipe! It was so easy to make and they loved being in the kitchen to help prepare our food!
How I Felt In Week One of The Gluten Free 30 Day Challenge
So I want to report how I felt on my first week of this gluten free 30 day challenge. The first couple of days were rough. I have no doubt that my body was detoxing from the gluten I had consumed over my mini-vacation (read about that here).
The first several days I had a hangover feeling and was really tired. Could have been exhaustion from the busy weekend trip, or it could have been my body detoxing from gluten. I think it was a bit of both.
By the end of the first week, I started to feel a bit better. I am looking forward to walking into week 2 of this challenge because I know that I will start to feel better…in fact, better than I have felt in months. Detox is good, it is your body getting rid of unwanted toxins.
On a positive note, I have lost 3 pounds this week, (a healthy weight loss is 2-3 pounds a week)! Whoot, whoot!!! 🙂 I have some healing to do internally so I’m not sure if the weight loss will continue, but we will see!
