Pizza, Pizza, Pizza!!!
Ok, so ya all know that I have a MAD pizza addiction! I can go on and on about all the pizzas recipes that I have posted but I am not, I am just going to send you over to our recipes gallery page to check them out for yourself!
So once again I find myself super excited about this pizza. I mean really guys, this one is a slam dunk! {Noticing a pattern with sports phrases when describing my recipes…home run, slam dunk, hole in one….what can I say, I am a competitive gal} 🙂
Always Cook Enough For Leftovers
Anyways back to this recipe. This recipe seriously takes 10 minutes from start to finish…for real!! The key is to use leftovers from the night before.
So here is how this recipe transpired. The night before I made my amazing pesto recipe and grilled some pesto chicken on the grill.
As always, I overcook to have leftovers so that lunchtime or breakfast is easier. This organic pesto chicken pizza recipe was my lunch the next day.
The Making Of This Organic Pesto Chicken Pizza Recipe
So as mentioned, I had some leftover pesto and leftover pesto chicken. I headed out to the garden and picked some fresh basil and some sweet 100 tomatoes (my all time favorite tomato, oh how sweet they are!)
I now have the making of this amazing pizza, how easy is that? The only other ingredient that is needed is a sprouted grain tortilla!
Here is my favorite brand of sprouted grain tortillas that I absolutely LOVE! We buy them by the case because it is much more economical that way and we go through them quite quickly.
Step 1:
Brush the sprouted tortilla with some pesto or olive oil. Place the pesto chicken, tomatoes, and fresh basil onto the tortilla.
Step 2:
Sprinkle generously with your favorite cheese of choice.
Step 3:
Place the pizza in the center of a cookie sheet. Doesn’t this look amazing? I almost didn’t cook it because it looked good enough to eat in its raw state.
Step 4:
It is now ready to go into the oven. Preheat oven to 450ºF and bake for 7-10 minutes.
Step 5:
Cook until the pizza is crisp. You are looking for the edges of the tortilla to become slightly brown and crisp. The underside of the tortilla will also become crispy making this an amazing thin crust pizza!
Step 6:
Slice and Serve. I mean really, don’t you want a bite of this pizza?

Organic Pesto Chicken Pizza Recipe

Description
This simple pesto chicken pizza recipe is so easy to make and perfect for lunch or light dinner.
Ingredients
- 2 large sprouted grain tortillas
- 2 tbsp of fresh pesto or olive oil
- 1 cup of sliced cooked pesto chicken
- 1/2–2/3 cup of sliced sweet 100 tomatoes (or cherry tomatoes)
- fresh basil, about 2-3 sprigs
- 1/2–1 cup of shredded cheese of choice.
Instructions
- Preheat oven to 450ºF.
- Place 2 tortillas onto a cookie sheet and brush the top of each tortilla with 1 tbsp of pesto or olive oil.
- Place the chicken, tomatoes and basil on the tortillas.
- Sprinkle your favorite cheese on top and bake for 7-10 minutes or until crust becomes crispy.
- Slice and serve.
