Potato Crusted Fresh Mozzarella Pizza, Organic Recipe

Potato Crusted Fresh Mozzarella Pizza

  • Calories: 312.9

Ingredients

  • 2 1/2 cups shredded potatoes (packed)
  • 1/2 tsp unrefined sea salt
  • 1/4 cup shredded parmesan cheese
  • 1 large egg
  • garlic salt to taste
  • coconut oil to grease pan
  • 1 tbsp olive oil
  • 2 cloves minced garlic
  • 4 oz fresh mozzarella, sliced
  • 2 medium tomatoes, sliced
  • fresh basil leaves to taste

Directions

  1. Preheat oven to 400 F.
  2. Peel and shred potatoes.
  3. Salt potatoes and set aside for 10 minutes.
  4. Squeeze excess water out of potatoes.
  5. Add egg, salt, and parmesan cheese to potatoes and mix well.
  6. Grease a pie dish very well with coconut oil.
  7. Press the potato mixture into the pan, building up the sides.
  8. Sprinkle with garlic salt and bake for 20 minutes.
  9. In the meantime, in a separate small bowl mix together olive oil and garlic.
  10. After the pizza has baked for 20 minutes, pull out of the oven and brush the top of the pizza with the olive oil mixture.
  11. Return back to oven and cook an additional 15-20 minutes or until slightly browned.
  12. Now add the basil, fresh tomatoes, and fresh mozzarella.
  13. Drizzle some olive oil on top. Return back to oven until cheese is bubbly and slightly brown (about 10-14 minutes).

Serving Size: Makes 6 slices, Serving size is 2 slices

    Uh, could I please place a delivery order Halle?…this recipe looks amazing. Too bad the above pizza pic wasn’t a scratch ‘n sniff option. Yum. I’ll let ya know what my fam thinks of it. Great idea, it would make a great breakfast pizza too. 🙂

    All I can say is that it took a whole lot of control not to eat the whole pie! I dont like tomatoes so I added green peppers, red onions, and broccoli! Thanks for another great recipe Halle!!

    what kind of coconut oil do i use? extra virgin or the non extra virgin

    Just made this and it was delish! Only problem I has though was that the middle was a little soggy (not much) and the “slice” of pizza wouldn’t come out whole. Any suggestions on what I did wrong would be greatly appreciated because my 5 year old loved it along with my junk food loving husband! Even with the sogginess in the middle.

      Try making the crust a little thinner next time and be sure to squeeze out all excess water out of the potatoes too.
