Description

This recipe for stuffed acorn squash makes a wonderful fall meal.


Ingredients

  • 2 medium acorn squash, halved and seeds removed
  • 4 slices of bacon, cut into 1-inch pieces
  • 1 medium onion, chopped
  • 1 medium granny smith apple, cored, peeled and chopped
  • 1 pound grass fed beef
  • 1/4 cup raw honey
  • 1 tsp pumpkin spice
  • 1/2 tsp dried sage
  • 1/4 tsp unrefined sea salt
  • 1/4 tsp pepper
  • 2 tbsp dry gluten free oatmeal (2 tbsp dry quinoa can be used if following a grain free diet)

Instructions

  1. Preheat oven to 350F.
  2. Place the squash face side down in a large baking dish.
  3. Add about 1 inch of water to the bottom of the pan and bake for 40 minutes.
  4. While the squash is cooking start preparing the filling.
  5. Over medium heat saute bacon for about 4 minutes.
  6. Add apples and onions and saute for another 4 minutes.
  7. Add beef, breaking it up into pieces, and brown slightly for about 5 minutes.
  8. Add honey, pumpkin spice, dried sage, salt and pepper and oats or quinoa and heat a few minutes.
  9. Once squash is done, drain the water and turn the squash over.
  10. Stuff with beef filling and bake for an additional 20 minutes at 350 degrees F.

    Halle, is the nutritional information listed based per serving or for the entire recipe?

    It is based on per serving. So half of an acorn squash is what the nutritional info is for.

    Although this acorn squash looks awesome, I had to tell you I made your zucchini cookies today and omgosh! were they ever delicious! I too will get an acorn squash as soon as I see one. Thanks again Halle for all of these wonderful recipes!

    Oh since I have you here, I just messaged Rhonda about making a butternut squash recipe. I was going to make the soup but don’t have any heavy cream on hand. Do you have a good recipe for it. I want to make it for dinner tonight.

    Hey Debbie, You can also use milk or half and half for the soup. Last year I made a butternut squash casserole where I mashed some squash, added some pumpkin spice and some cubed chicken and topped it with some chopped pecans and drizzled it with some butter. It was delicious. You could try something like that?
