Description

These little egg cups take only minutes to make and 8 minutes to cook.

Ingredients

  • 6 organic eggs
  • 3 slices of cooked bacon
  • 1/2 ounce of raw cheese of choice (I used gorgonzola in this recipe)
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400 F.
  2. Grease a muffin tin with coconut oil.
  3. Crack one egg into each muffin tin spot.
  4. Sprinkle with salt and pepper.
  5. Add bacon crumbles and cheese to each egg.
  6. Bake for 8-12 minutes, depending on how you like your eggs done. If you like your eggs runny I would start with 8 minutes. If you like your egg yolks firm then cook for 12 minutes.

sounds & looks great! since I can’t do meat & dairy together, what would go well with the meat rather than cheese? hmmmm… or the cheese & not the bacon/sausage??

Thanks Andrea , how about the gorgonzola and spinach and a little sun dried tomatoes, or fresh tomatoes? If you like onion, then add a little red onion. You could always add a little pancetta with brussel sprouts (I know how much you love that combo together 🙂 Just a few thoughts 🙂
