How To Make Organic Coconut Butter or Coconut Cream (Video 4 Of A 4 Video Series)

Coconut butter is my new favorite snack. So just what is coconut butter or coconut cream? Coconut butter/cream is dehydrated coconut, preferably freshly dehydrated coconut flakes, that is put into the food processor/Vitamix and blended to form a liquid cream. It can be used on so many different foods. Coconut butter is like coconut oil. It is solid in cooler temperatures and in warmer temperatures it is liquid. It can be stored in a pantry. If you would like it to be a little runny (as shown in the picture), just heat it slightly. I like to drizzle coconut butter over fresh berries. It is also great as an icing on your favorite cookies or cakes.

    I have a vitamix – I have been blending at medium for over 15 minutes and am not seeing anything yet. I used flakes that I had made milk from – is this correct? Thanks!

      @LisaBrewerCanter Yes, I would do it on high speed. I used my food processor, but it should start to come together soon. You used your dehydrated coconut right?

        @hallecottis I used my dehydrated coconut that was left after I made milk – I just looked at your video again and have added some coconut oil – seems I must have stripped out all the oil. My milk is certainly rich! LOL Should I be dehydrating coconut that I do not use to make milk to make the butter with. Thanks so much for your help. I am really excited about how much I can do with coconut!

          @hallecottis Ok I have an important vitamix update. Because the vitamix emulsifies things – what was left after making milk was only good for flour. I just bought some unsweetened organic shredded coconut and was able to liquefy it in about 3 minutes. So for $3.50 I have made half a large mason jar worth of coconut butter – about half the size of the container you hold up and paid so much for. It is delicious!! I was blending the other stuff for well over a half hour and still ending up with a dry powder. So the milk I make really is that rich….

          @LisaBrewerCanter Thanks for the update Lisa. I do not have a vita mix so this is good to know…A food processor works better. You should try my coconut butter cookies/bark that I just posted, they are super good 🙂 Thanks for all the feedback!

    I have been looking at coconut flour and oil in the shops and on line but it’s so expensive! Having seen your videos I will start looking for coconut instead. Thanks so much! I have been enjoying your gardening information as well. I will try growing stevia quinoa and amaranth again after seeing yours. Our climate is very different here in Cornwall England, than in Wisconsin but from your information it should be possible.

    I have started the paleo diet and was wondering if you can make coconut oil out of the butter. Could i heat it up to make the oil? x

    Hi,  
    I have so many allergies with foods like Gluten, Nuts, Dairy as well as many other foods, all synthetic fabrics, latex, rubber as well as smells.  I just wanted to say thank you for your book in order to help many allergy sufferers like me.  I am using a lot of organic coconut oil and it’s been a great help in the kitchen.

    Please remove the drumbeat in the background.  It is very distracting and makes the audio difficult to hear.

    So if this is the wet coconut mush, wont work , but if dry, will work to butter?
    I had just made some coconut milk today with my juicer on the screenless tool (crushes).
    Dont have a blender or food processor so not sure if can make the butter, will try running thru the juicer again when the mush is dry(might try in skillet). Thank you

      Lea, I really don’t think you can use the pulp from making milk to make butter…but you can dry it (oven or dehydrator) and use it as coconut flour! Same with almonds…I LOVE getting two things out of one…especially expensive ones! Once its very very dry, I run it through my food processor, then a coffee grinder if needed. I haven’t been able to get it as finely ground as what I buy in the store, but it works well enough for me 🙂

    If I wanted to use the store bought coconut butter, how much would I use? I have two jars of it in my pantry.

      I am confused. If you already have store bought coconut butter, why would you make this? Essentially you are making homemade coconut butter, if you have it then you don’t need to make it, right?
