Giving Up Dairy

 

For the last year, I’ve been on an intense healing journey.  You can read more about that here.  

One of the foods that I needed to give up for my healing journey was dairy.  I’ve never been a big dairy drinker, but I do like it in my coffee and on my cereal from time to time. I also like to bake with it too.

So I needed to come up with an alternative to dairy and this suits my needs perfectly!

An Easy Almond Milk Recipe That Has The Most AMAZING Flavor

 

Now I’ve tried store-bought almond milk before and gosh was it god awful!

I made numerous attempts at making a good tasting almond milk, but that fell short too!

It wasn’t until I started to explore with a few ingredients that everything fell in place, and I created the most frothy and delicious almond milk recipe that I think anyone can find!  Yay, it is that good!!  So let’s jump into this easy almond milk recipe already!

3 Special Ingredients That Makes This Recipe a 5-Star Recipe!!

 

So you only need a few good ingredients to make a good almond milk.  But three ingredients make this almond milk recipe a 5-star recipe.

What are these ingredients?

  • Dates
  • Cinnamon
  • Pinch of Salt

Dates give this almond milk the sweetness it needs.  Cinnamon gives it an extra frothy texture and adds a ton of flavor and the pinch of salt brings everything to life!

So here we go…just throw everything into a high-speed blender like this!

Blend on medium speed for 2 minutes.  After 2 minutes turn up to high speed and blend for an additional 30 seconds.

It will look all frothy and blended like this!

Now you do need to strain this, but I have a super easy method and I have found the BEST reusable fine mesh produce bags that work perfectly…and the clean up is super fast too! BONUS

I just hang the bag from my cabinets like this.

And place a bowl underneath the bag to catch the almond milk.

You can leave it hanging for a half hour or you can squeeze the pulp to get all the milk out more quickly, both methods work.

If you’d like you can reuse the almond pulp in a good granola recipe or you can dehydrate it and use it as almond meal in some of your favorite almond baking recipes!

When you are finished straining the milk, pour in a glass container and refrigerate for up to 5 days.  This milk is smooth, frothy and so totally amazing…I think you are going to love this recipe! 🙂

Description

This recipe is frothy, has a slight hint of sweetness and is incredibly delicious!


Ingredients

  • 4 cups water, filtered
  • 1 cup almonds, raw not roasted
  • 4–5 organic dates, pitted
  • 1/4–1/2 tsp cinnamon, ground
  • dash of salt

Instructions

  1. Add all of the ingredients into a high-speed blender Vitamix,  NutriBullet or Blendtec.
  2. Blend on medium speed for 2 minutes.  After 2 minutes increase the speed to high and blend for an additional 30 seconds.
  3. Strain your milk in one of these reusable bags or in some cheesecloth.
  4. Put the milk into a glass container and store in the refrigerator for up to 5 days.

    That action shot is worth making almond milk at home! Every time I pick up a carton, I think, “I should really just make it from scratch” because it’s so expensive… I think this was the inspiration I needed!

    This would make the perfect ‘cereal’ milk because it’s already pre-flavored a bit with cinnamon and a hint of sweetness. I always overfilled my bowl with milk as a kid to get the leftover ‘cereal’ milk! I’d also like to try this for a chai latte in the morning!
