Description
This organic peach cobbler recipe is a great dessert, perfect for warmer weather.
Ingredients
- 3 cups sliced organic peaches, skins removed (about 5 peaches)
- 2 large eggs
- 4 tbsp grass fed butter, melted and cooled
- 1/4 cup coconut flour
- 1/4–1/2 cup raw honey, sucanat or sweetener of choice
- 1/4–1/2 cup raw milk, organic whole milk or fresh coconut milk
- 1/4 tsp homemade baking powder, see recipe
Instructions
- Preheat oven to 400 F.
- Put the sliced peaches in the bottom of an 8×8 square pan.
- In another bowl combine butter, eggs, coconut flour, baking powder, steviva blend and 1/4 cup of milk.
- Stir until there are no more lumps and you have the consistency of a pancake batter.
- If it is too thick, add some more milk until you get the right consistency.
- Pour over peaches and bake for 30-35 minutes.
- Top with a dollop of whipped cream or homemade ice cream.

Halle, omg. OMG!!!! Oh my gosh – have I said that already? I just made this, just literally pulled it out of the oven and turned right to the laptop. Mind you I used blueberries because that was what I had in the fridge but nevertheless, this smells A-MAY-ZING!!!!

that looks wonderful, Halle! I make mine with the butter into the pan in the oven first, then add the other ingredients. in my case, I would likely use macadamia oil in its place and cocomilk. Looks like a worthy and yummy experiment!!!
Rhonda, one of my best childhood memories is eating fresh picked Michigan peaches as big as my head. Then we’d run into Lake Michigan to wash off all the sticky. The water was so cold, we were usually still sticky when we’d come screaming out of the water!
