Description

This organic peach cobbler recipe is a great dessert, perfect for warmer weather.

Ingredients

  • 3 cups sliced organic peaches, skins removed (about 5 peaches)
  • 2 large eggs
  • 4 tbsp grass fed butter, melted and cooled
  • 1/4 cup coconut flour
  • 1/4–1/2 cup raw honey, sucanat or sweetener of choice
  • 1/4–1/2 cup raw milk, organic whole milk or fresh coconut milk
  • 1/4 tsp homemade baking powder, see recipe

Instructions

  1. Preheat oven to 400 F.
  2. Put the sliced peaches in the bottom of an 8×8 square pan.
  3. In another bowl combine butter, eggs, coconut flour, baking powder, steviva blend and 1/4 cup of milk.
  4. Stir until there are no more lumps and you have the consistency of a pancake batter.
  5. If it is too thick, add some more milk until you get the right consistency.
  6. Pour over peaches and bake for 30-35 minutes.
  7. Top with a dollop of whipped cream or homemade ice cream.

Could I use Almond flour? I do not have any coconut flour.

They really aren’t interchangeable. Using almond flour would work, just not sure on the quantity.

I stumbled on this recipe while trying to find a peach cobbler made with no sugar, and am so happy I found it, I made it last night and it was delicious!! I wanted to add that I used coconut milk since that’s what I had, and it made it custardy, it was so yummy!! Thanks for the recipe!!
