I Love This Gluten Free Cereal Recipe!
So if you have been around my blog much, you might have noticed that I pretty much live a gluten free life and I often eat grain free as well.
Notice that I said pretty much! I believe in balance. Sometimes I will eat a gluten free cereal recipe like this one, and other times I might whip up a batch of my Paleo gluten free and grain free cranberry almond crunch cereal. I like to have options, so that I don’t get bored with on a particular food.
So today, I want to share with you a gluten free cereal recipe that is a little different then my typical “from scratch” kind of baking. I am actually going to use a boxed prepared food item, but hold on…it is a different kind of boxed item, and definitely a healthier option!

I get it, sometimes you want convenience! Finding “healthier” convenience foods can be hard to find in this day and age. But guys, have I got a terrific brand to tell you about!

Now I am not saying make your whole diet out of these products, what I am saying is that it is okay from time to time to use these products. It is all about a balance, remember?
So for this recipe, I used Living Now’s Chocolate Chip Banana Bread Mix and let me tell you, it makes an incredible crunchy cereal!

- Preheat oven to 350ºF.
- Grease a 9″x13″ pan with coconut oil and set aside.
- In a medium mixing bowl, combine bananas, coconut oil and eggs and mix well. Stir in the chocolate chip banana bread mix.
- Pour into the greased pan and bake for 25 minutes.
- Break the banana bread into small pieces and place them into a dehydrator set at 160ºF.
- Dehydrate for 4 hours, or until crunchy.
- Store in a cool, dry place
- Serving Size: 1/2 cup
